There's tons of reasons why you should drink more water. But as for drinking on an empty stomach, water can be a major metabolism booster (I think I've read maybe up to 24% boosted metabolic rate for for a short period). Better for organs (to flush toxins), they get that hydration more direct than if they had to compete with digesting food, helps prevent headaches/migraines, boosts energy, and can help you control your weight because you might eat less junk (you'll be too full from water to overdo it on the food).
Personally I drink a 24 oz bottle of water first thing in the morning, and I am immediately more alert and awake.
