Beef & Bell Pepper Stir-Fry
Ingredients:
1.5 lbs flank steak, cut into strips (fat trimmed)
1 medium yellow onion, sliced
2 large green bell pepper, cut into strips
1 large red bell pepper, cut into strips
1.5 tbsp. crushed garlic (or 1.5 tsp. garlic powder)
1 tbsp. canola oil
6 tbsp. low-sodium soy sauce (or low-sodium beef broth)
1 tsp. red pepper flakes (optional)
Ground pepper to taste
Directions:
Stir garlic & oil in wok or large frying pan for one minute over medium heat. Add beef & two tablespoons of soy sauce; cook over medium-high heat for about 5 minutes. Add in all vegetables, red pepper flakes & remaining soy sauce; heat until beef is cooked through & onions are caramelized.
This fast & easy version of beef stir-fry takes less than 30 minutes to prepare. High in protein, low in carbs, & bulked up with delicious vegetables, it won't leave you hungry afterward. If you like it a little spicy, double the red pepper flakes or top it with Sriracha hot chili sauce. The dish taste great over steamed rice.
