    Sweet Potato Wedges with Coconut Oil



    Great alternative to french fries.I like to make a bunch of these and keep them in the fridge for quick easy sides for the week.


    Servings: 4
    Preparation Time: 40 minutes




    • 2 sweet potatoes, peeled and cut into wedges
    • 1 tablespoon melted coconut oil
    • 2 teaspoons curry powder
    • 1 teaspoon cumin powder
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon salt substitute







    Recipe Directions: Pre-heat oven to 400 degrees F.

    Combine sweet potatoes, coconut oil, curry powder, cumin powder, paprika and salt in a large bowl. Toss until the sweet potatoes are evenly coated in the spice mixture.

    Place potatoes on a baking tray and bake for 15 minutes. Remove from the oven and give the potatoes a flip. Put them back into the oven for another 15-20 minutes or until the potatoes are golden brown on the outside. Serve with dipping sauce.
