    Paleo Cinnamon Coconut Pancakes


    Description


    These pancakes are both paleo and ultra low carb. They are excellent topped with extra cinnamon, maple syrup, honey, or a little grassfed butter.

    Ingredients




    • 1 large Egg
    • 2 large Egg White
    • 1/2 Tsp Cinnamon
    • 1 Salt Substitute
    • 1 Tsp Vanilla Extract
    • 1/2 tsp Baking Soda
    • 1 serving (1 packet)Pure Via Stevia
    • 2.5 servings (4 1/2 Tbsp) Coconut Secret Raw Coconut Flour
    • 1/2 serving (serving = 1 cup) Blue Diamond Almond Breeze Almond Coconut Blend Milk



    Directions


    1. Get out your handy food processor.
    2. Add all your ingredients.
    3. Blend.
    4. Pour the batter onto a greased hot griddle over medium-high heat. Make the pancakes on the smaller side so they are easier to handle (unless you like big sloppy messes).
    5. Watch the pancakes, and once they start to brown on one side, flip 'em!
    6. Cook for another minute, and they're ready to eat! Top with extra cinnamon, butter, maple, syrup, honey, fruit, etc.
