  • Spicy Beef and Bean Casserole

    (Taken from bodybuilding.com)

    - 1.5 lb 80/20 ground beef (weight after cooking/draining)
    - 1 can (15 oz) Eden organic black soy beans--accept no substitutes! (do not drain)
    - 10 oz Pace chunky salsa (hot)
    - 6 oz mozzarella cheese

    In a skillet, brown the ground beef. Drain.
    Stir in beans and salsa.
    Bring mixture to a boil, stirring frequently.
    --In the meantime, turn on your oven to broil.
    Once mixture is boiling, stir well and remove from heat.
    Sprinkle cheese on top, and place in broiler just long enough for cheese to melt (should only take about 2 mins).

    Makes 6 servings.
    Calories: 465 (54% fat, 8% carbs, 38% protein)
    Fat: 29g
    Carbs: 9g (3g net carbs)
    Protein: 42g

    Sounds good.I would definitely go with extra lean beef and fat free cheese though to get that fat content down.
